A LUXURY DINING EXPERIENCE

“Sine Sole Sileo Dining” encapsulates the essence of timekeeping rich history, from ancient civilizations to modern society, where the sun’s journey across the sky served as a natural timekeeper. This luxury dining experience, inspired by the antique motto “I am silent without the sun,” engraved on sundials, pays homage to the cultural significance of timekeeping and the craftsmanship behind sundial creation. As diners immerse themselves in Provence’s sun-drenched landscapes, they are transported to an era where working hours were governed by daylight, echoing the timeless elegance of the region. Just as sundials intricately track the sun’s movement, this interior seamlessly weaves together history, artistry, and gastronomy, emphasizing the profound connection between time, light, and life in Provence. Operating only during daylight hours, this authentic dining journey honors the tradition of timekeeping and celebrates the enduring legacy of humanity’s fascination with the sun’s journey through the sky.


This project was a collaborative effort where we each leveraged our strengths to create a successful and cohesive design. I took on the role of managing group dynamics, ensuring all voices were heard, and fostering a supportive environment for creative growth. While we worked together throughout the process, I focused heavily on the concept development, design development and graphics from start to finish, shaping the visual identity and bringing our shared vision to life.

This project was completed during our time studying abroad in France, where our in-person experiences, travels, and cultural immersion added depth and authenticity to the final design. The rich history, art, and vibrant atmosphere of France inspired every aspect of our design, allowing us to integrate the unique elements of French culture and landscape into the project. Our time abroad not only shaped the design but also deepened our understanding of global design perspectives, making the outcome truly reflective of both our personal growth and the cultural influences we encountered.

French Cuisine- Red Mullet

French Cuisine: A nod to Chef Glenn Viel’s Provencal background, reflecting his culinary expertise. It aligns with the restaurant’s location, fostering a sense of place attachment and offering guests a well-rounded experience that encapsulates the essence of Gordes.

The Dish: Red mullet is a classic dish in Provence, known for its delicate flavor. It is typically prepared to allow the natural flavors to shine through. This dish, being the key menu dish for Sine Sole Sileo, reflects the ideas of utilizing local inspiration and further embracing the heritage of Provence.


THE CHEF

Glenn Viel

 Inspired by the four elements, nature, and local ingredients from the Oustau, he uses organic products from surrounding gardens.

His goal is to make every guest who comes to his table dream. He likes to highlight the product in its most authentic version and is brimming with ideas and imagination, thus offering a unique experience.
